Caramelised Onion and Feta Tart

Ingredients

• 5 medium onions, thinly sliced
• 3–4 tbsp olive oil
• ½–1 tsp dried thyme
• 1 tsp fennel seeds
• ¼ tsp black pepper
• 325g ready-rolled puff pastry
• 200g feta, crumbled
• Chopped parsley, optional

Method

• Cook onions in olive oil over medium heat for 25 minutes, until soft and golden.
• Stir through thyme, fennel seeds and pepper, then cook for 5 more minutes.
• Preheat oven to 220°C and line a baking tray.
• Place pastry on tray and score a 1cm border around the edge.
• Spread onion mixture over pastry, keeping the border clear, then top with feta.
• Bake for 20 minutes, or until golden and bubbling.
• Sprinkle with parsley and serve warm.
