Easy winter recipe: warm chicken pesto bake
When the weather cools down, simple, nourishing meals can make all the difference. This warm chicken pesto bake is easy to prepare, full of flavour and packed with protein to help support strength, energy and everyday wellbeing.
With just five core ingredients, it is a practical recipe for midweek dinners, relaxed entertaining or cooking ahead for the next day. The chicken provides lean protein, the cannellini beans add extra fibre and plant-based protein, while the cherry tomatoes bring freshness and natural sweetness. Finished with pesto and melted mozzarella, it is comforting without feeling too heavy.
Ingredients
Serves 2
• 2 chicken breasts
• 3 tablespoons pesto
• 1 cup cherry tomatoes
• 1 cup grated mozzarella
• 1 tin cannellini beans, drained and rinsed
Method
Preheat oven to 180°C.
Place the chicken breasts in a baking dish and spread the pesto evenly over the top.
Scatter the cherry tomatoes and cannellini beans around the chicken, making sure they are evenly distributed in the dish.
Sprinkle the grated mozzarella over the top.
Bake for 25–30 minutes, or until the chicken is cooked through and the cheese is golden and melted.
Allow to rest for a few minutes before serving.
Serve with a simple garden salad, steamed greens or roasted vegetables for a balanced, warming meal.
Simple tip
For extra flavour, add a squeeze of lemon juice, cracked pepper or a handful of fresh basil before serving. You can also slice any leftovers and enjoy them with salad the next day.
