Goodness in a Bowl: Pumpkin Soup
There is something about the familiar comfort of homemade pumpkin soup. Smooth, warming and easy to enjoy, this simple winter recipe is perfect for a quiet meal at home or as a nourishing dish to enjoy throughout the week.
With fresh pumpkin, gentle savoury flavour and a creamy finish, it is a wholesome classic that brings a little warmth to the cooler months.
Ingredients
Serves 4
• 1.2kg pumpkin, peeled and chopped into large chunks
• 1 onion, chopped
• 2 garlic cloves, peeled
• 3 cups chicken or vegetable stock
• 1 cup water
• 1/2 cup milk or cream
• Salt and pepper, to taste
Method
• Place the pumpkin, onion, garlic, stock and water into a large pot.
• Bring to the boil, then reduce slightly and cook for around 15 minutes, or until the pumpkin is very tender.
• Remove from the heat and use a stick blender to blend until smooth. You can also carefully transfer the soup to a blender in batches if needed.
• Season with salt and pepper to taste.
• Stir through the milk or cream until combined and warmed through.
Simple tip
For extra richness, add a small knob of butter before blending, or a pinch of spice for extra warmth and flavour. For the best result, use a good cooking pumpkin such as Kent, Jarrahdale, or Butternut Pumpkin. Serve with warm crusty bread and butter for a crunchy, satisfying finishing touch.
